Okay, so the goldfish are just in there to prove a point. The guy who built this deep fryer put the fish in to demonstrate that you can have hot oil (163° Celsius) on top and cold water on the bottom of the deep fryer without the whole thing blowing up like in the video. Normally you wouldn’t want to add water to hot oil as it will make the oil jump out (don’t try it!), but this construction keeps that from happening.
The fryer has a cooling system that cools the bottom part of the oil layer enough to keep the water from boiling. This allows for pieces of batter to fall down to the bottom of the fryer, so they won’t burn up and the oil stays much cleaner.
